Compared to simmering in a saucepan, fish can be prepared in the Cook-Zen with less seasoning, and with less risk of the fish falling apart. The fish in this recipe will soak up delicious flavors of ginger and soy sauce. This recipe calls for kinki, a rockfish from Hokkaido, but can be prepared with a fillet of any rich, white-fleshed fish, such as sea bass or cod.
Ingredients
1 Kinki fish (about 250g)
5 slices of ginger
Sauce
3 tbsp soy sauce
2 tbsp mirin
2 tbsp sake
1 tbsp sugar
Rinse the fish with water and remove the scales with a knife.
1. Place the Kinki, ginger, and sauce ingredients in the Cook-Zen. Set the inner lid to the “close” position, cover with the outer lid, and heat on medium-high in the microwave for 4 minutes.
